Buttermilk Pancakes

Saw this recipe on my friend’s blog & give it a try this morning.
  • 2 cup self-raising flour
  • 1 egg
  • 2 tbsp sugar
  • 1 1/2 cups buttermilk (replaced w/ 1 1/2cup milk & 1 1/2tbsp lemon juice, let stand for 10mins be4 using)
Mix all to form batter be4 cooking in a non-stick pan.
Hayden took only 3 pieces because he does not want to add honey or butter to it, thus, must have taste a little plain for him.

Rice Cooker duck rice

Hubby asked if can bake more bread instead of cake, so I go back to d recipe that works out just right, wolf-berries bread recipe. But this rd I made some changes. Instead of wolf-berries, I used half a mashed banana (Hayden eat half) & added 1½tsp of yeast instead of 6g. When d bread came out, it really looks very good. But I think I cut it too soon & thus, d ‘opening’ looks flat but d rest is VERY soft!

I also tried out my friend’s claypot ckn rice. But instead of ckn, I used left-over duck meat that’s sitting in d freezer.


(a)
500g duck meat
1 tbsp soy sauce
1 tbsp oyster sauce
1/4 tsp sesame oil
8 bulbs shallots (finely chopped)
2 tbsp ginger (chopped)

(b)
1 cup uncooked rice
3/4 cup water

Marinate (a) overnite in d fridge. Dump (a) & (b) into d rice cooker & cook as 1 normally does for plain white rice. When d cooking cycle is completed, let stand for 10-15mins be4 serving.

It’s so tasty that I had 1 full bowl even though am on diet & don’t usually take rice after 4pm.

Honey Ginger Ckn

Was re-org my mailbox when I came across this recipe cutting from the Spore Womens Weekly mazg Nov2004 issue. & since I got all d ingredients on hand, thot I give it a try. But instead of baking, I grill it instead. Turn out almost like d pix in d mazg (forgotten to take pic) & it taste very nice & juicy.

60ml water
120g honey
1/4 cup firmly-packed brown sugar
50g freshly cut ginger strips
2 cloves crushed garlic
1 lemon, rind removed & cut into strips
4 (800g) ckn thigh cutlets (in total, I only used 900g of ckn drumsticks w/out skin)
4 (600g) ckn drumsticks
Salt & pepper

  1. Combine water, honey & sugar in a pan over med fire. Cook, stirring till sugar dissolves. Bring to boil. Then add ginger & lower fire to simmer, stirring for 5mins or till ginger is tender.
  2. Trf ginger mixture to a large bowl. Add garlic & lemon rind, stir to combine. Cut deep slashes through thick part of ckn be4 placing them into ginger mixture. Ensure coat evenly by turning it. Cover, refrigerate for 4hrs or overnite.
  3. Place ckn in single layer in a baking dish & grill for 40mins or till ckn is cooked through & browned. Sprinkle salt & pepper be4 serving.

Banana Bread

Was re-arranging kitchen cupboard when I saw this biscuit mix that I got from Chicago when I visited my best friend living there last May. Expiry date is 25Mar09! so I decided to try out the Banana bread recipe stated on d box last nite. 5mins into kneading, I added 5tbsp of wheat flour cause d dough looks really wet. When I got up in d morning to check on d bread, it looks & taste more like banana cake instead.

Makes 1 loaf
  • 1 pkg JIFFY buttermilk biscuit mix
  • 3/4 cup sugar
  • 1/4 cup shortening
  • 2 eggs
  • 1 cup very ripe mashed banana
Normal bread cycle with light setting

As usual, I had to cut it out in bear shape or Hayden wont eat it. sigh..

Marinated boil Chkn

Been having problem getting Hayden to eat dinner, so when I saw this recipe on web, thot I give it a try. However, I changed it a bit. Instead of chkn on a stick, I just marinate it for 5hrs & boil d chkn in clear water to make udon soup (which is Hayden’s fav).
  • 400g wing drum
  • 100g fresh mushroom
  • 1 tbsp soy sauce
  • 1/3 cup lemon juice
  • 4 cloves scallion (finely chopped)
  • 1tbsp fresh ginger (finely chopped)
Whoa la! Chkn udon soup! Actaully tasted ok, which is a surprised cause I didn’t add any seasoning at all. D taste must have come from d marinated chkn. Hayden had 1½bowl! ;->

Knitting

Hubby flew off last nite to KL for buz trip, thus, my job to prepare & send Hayden to school. Guess what! I didnt check d volume of my iPhone & thus, alarm didnt sound off this morning @ 7am! OMG! Lucky, Hayden started moving ard & woke me ard 7.25am, so, made it to school by 8am. Phew!
& I mgd to go back to sleep after coming back from his school till 12.30pm when my hubby woke me up by smsing from KL. So I wash up & went to Central ChitLom StarBucks to have my Green Tea Latte while working on my knitting (which is coming along well). Am doing this so that I can save some electrical w/out having d aircon on throughout d whole day. Cause it's really HOT here in Bkk & my electric bill has been gg up since I become a homemaker! I have been gg there for 3times since last week. Not even sure this will cut down my electric bill but definitely up my cash spending so far!

Cranberries bread

Since d Whole Wheat bread didn’t turn out right, I had to bake another one for Hayden’s bf. & since I have so much cranberries on hand, decided to use d Wolf-berries bread recipe but switch d wolf-berries with cranberries instead. & since Hayden does not like eating bread with visible fruit pieces, I blend d cranberries into tiny pieces be4 putting into d dough. Turn out ok - soft & nice.

  • 270 g All-purpose flour
  • 6 g Dry active yeast
  • 140 g Warm milk
  • ½ tsp Salt
  • 2 tbsp Sugar
  • ½ pc Egg
  • 35 g Butter (room temperature)
  • 40 g Cranberries

Sugar-free, fat-free Whole Wheat Bread

Thot I give this recipe a try & it didn’t turn out right.
  • 2/3 cups room temperature water
  • 2 tbsp fat-free margarine
  • 9 tsp sugar substitute
  • 2 tbsp sugar-free syrup
  • 2 tsp salt
  • 4 2/3 cups whole wheat flour
  • 3 tsp bread machine yeast

Very thick crust & it ‘peel’ off when I tried to cut it. In d end, d whole crust peel off from d central bread (which is actually quite soft & nice).

Wholemeal Cheesy bread

Run out of bread flour, thus, I thot I try out d Cheesy Buttermilk bread recipe using wholemeal flour instead.
  • 3 cups bread flour (replaced w/ wholemeal wheat flour)
  • 1 1/8 cups buttermilk
  • 2 tbsp sugar
  • 3/4 cup grated chedder
  • 1 1/2 tsp yeast

It turn out heavy even though I have increased d milk by 3tbsp cause it looks quite dry after 5mins of kneading in d bread machine. Taste not as good as using bread flour but at least Hayden took 2 slices!

Butter Bread

HURRAH! I managed to swim 30mins non-stop today! Later, will be gg out for a walk ard d Central World to look for NaRaYa bags to pack Hayden's daily change of clothes for school. His old one's zip broke.
Also tried d Butter bread recipe that Sindy give few days ago. Turn out not as soft as d Yogurt bread but with a stronger taste to it.
  • 200g bread flour
  • 1 1/2 tsp yeast
  • 3 tbsp caster sugar
  • 1 tsp salt
  • 2 eggs
  • 50g butter
  • 50ml fresh milk

Wolfberries bread

I got this recipe from my friend’s blog & even though both used d oven, I thot I give it a try in my bread maker & whoa la, wolfberries bread.
  • 270 g All-purpose flour
  • 6 g Dry active yeast
  • 140 g Warm milk
  • ½ tsp Salt
  • 2 tbsp Sugar
  • ½ pc Egg
  • 35 g Butter (room temperature)
  • 40 g Chinese wolf-berries
  • ½ tbsp Sesame seeds

Looks very different from what they both have cause I soak d wolfberries in hot water be4 draining them out & putting them into d bread maker. Thus, d wolfberries were soft enough to break down & "melt" into d dough during kneading.

Cheezy bread turn out looking spoty but taste Great!

  • 1cup fresh milk
  • 1/8cup butter
  • 1tsp salt
  • 2tbsp sugar
  • 3/4cup grated cheddar
  • 3cup bread flour
  • 1.5tsp yeast

Select normal bread w/light setting

Gain & Honey Bread

Tried baking Gain & Honey bread last nite & it didn’t turn out ok, heavy & crumby.
  • 3/4 cup warm water
  • 2 TBSP honey (liquid or melted)
  • 2 TBSP olive oil
  • 1 tsp salt
  • 2 TBSP lemon juice
  • 3 1/2 cups whole wheat flour
  • 1/2 cup rolled oats
  • 2 tsps granulated yeast
So, I cut it up into small strips & toast them up till they are dry & crispy. Whoa la, Gain & Honey biscotti!

Yogurt bread

Got a new yogurt bread recipe from Sindy & tried it out last nite.. Turn out GREAT!

  • 250g bread flour
  • 15g caster sugar
  • 3g yeast
  • 3g salt
  • 100g flavoured yogurt
  • 60ml fresh milk
  • 1 egg
  • 30g butter

Honey Wheat Oatmeal bread & Knitting

YES! Did managed 30mins of yoga. This is good.. Must really conitnue..
Tried Honey Wheat Oatmeal bread last nite & it turn out a little wet, but ok.

Makes 8 slices on regular white bread cycle & light setting

  • 6.6floz water,
  • 2tsp olive oil,
  • 3.5tbsp honey,
  • 2/3tsp salt,
  • 2/3cup rolled oat,
  • 1cup wheat flour,
  • 1cup bread flour,
  • 2/3tsp yeast.

Also trying my hand on knitting. Start this piece on Sunday but kept undoing it cause it looks too small for Hayden. Finally, yesterday, I managed to get it in d right size & will conitnue. Hopefully, I will complete this Cable Vest for Hayden be4 he outgrows it.. ;-p

Yoga today!

YES! I did it! After sending d boys off, I went upstairs to d gym & did my 20mins of yoga.. Finally, I started something.. Wanted to continue but was starting to feel giddy, thus, had to stop. Hopefully I can get in at least 30mins tomorrow morning..

Oh, btw, I tried yogurt bread last nite & it didnt turn out right. in do end, have to throw it out.

Carrot bread

Tried this recipe that I found on d web but changed some of d ingredients because I ran out. Turn out ok but some of the brown sugar wasn't mix completely into d dough.

  • 3/4cup brown suger,
  • 2eggs,
  • 1/2cup salad oil,
  • 1cup grated carrots,
  • 1 1/2cup flour,
  • 1tsp cinnamon,
  • 1tsp baking powder
  • 1tsp baking soda

Baked in bread maker on quick bread/light setting

Well, since I have time on hand, thot I give this 'blogging' a try. I have just got retrenched & have not decide what to do with all these time I have on hand. I have alrdy wasted 3days just laying ard & playing computer games. Didnt want to continue wasting time like this, thus, thot by blogging how I spent my time, might push me to use it wisely.
