Light Oat Bread

As mentioned in previous posting, I don’t have bread flour on hand & won’t be buying any till next wkend. So am still searching for non-bread-flour recipe. Then I remembered I tried this Light Oat recipe be4. Thot I give it another go but reduce d water to ¾cup with ½cup whipping cream that’s expiring soon.

End result – a rather soft loaf that does not crumples as easily but d middle still collapes inwards just like my 1st attempt.. Might need to reduce d yeast or increase d salt.

Light Oat bread

During d previous kitchen cupboard 'spring' cleaning, I also found some rolled oat so I decided to give this recipe a try. Made some adj to include d rye flour so that I can finish mine up, thus, ended with huge dough so I freeze half of it. End result - d bread is so soft that Hayden even ate d crust! Only problem I have with this bread is - it crumples easily thus, diff to spread butter/jam on it.
Here's my adjusted ingredients:
  • 1¼ cup warm water
  • 2 tbsp unsalted butter
  • 1 tsp salt
  • 2 cup all-purpose flour
  • 1¼ cup rye flour
  • ½ cup rolled oat
  • 2 tbsp brown sugar
  • 1½ tsp yeast

Put all into bread machine & select rye bread setting.

Grain & Honey Bread

Just got back from SG & didnt have any eggs in d fridge, thus, thot I give d Grain & Honey bread another go after 1 failed attempt. This time, I added 85ml milk. I checked d dough serveal times & it actually looks really good, rising nicely. But on d last round of rise, I noticed that d bread doesnt rise as nice as previous rd. True enough, when I waked up this morning to take out d bread, it's flat. Still soft inside but didnt rise at all. sigh..

Gain & Honey Bread

Tried baking Gain & Honey bread last nite & it didn’t turn out ok, heavy & crumby.
  • 3/4 cup warm water
  • 2 TBSP honey (liquid or melted)
  • 2 TBSP olive oil
  • 1 tsp salt
  • 2 TBSP lemon juice
  • 3 1/2 cups whole wheat flour
  • 1/2 cup rolled oats
  • 2 tsps granulated yeast
So, I cut it up into small strips & toast them up till they are dry & crispy. Whoa la, Gain & Honey biscotti!

Honey Wheat Oatmeal bread & Knitting

YES! Did managed 30mins of yoga. This is good.. Must really conitnue..
Tried Honey Wheat Oatmeal bread last nite & it turn out a little wet, but ok.

Makes 8 slices on regular white bread cycle & light setting

  • 6.6floz water,
  • 2tsp olive oil,
  • 3.5tbsp honey,
  • 2/3tsp salt,
  • 2/3cup rolled oat,
  • 1cup wheat flour,
  • 1cup bread flour,
  • 2/3tsp yeast.

Also trying my hand on knitting. Start this piece on Sunday but kept undoing it cause it looks too small for Hayden. Finally, yesterday, I managed to get it in d right size & will conitnue. Hopefully, I will complete this Cable Vest for Hayden be4 he outgrows it.. ;-p
